Moar baking? The biscotti is gone already.
Mocha Kahlua Cookie Truffles: 100 and some calories per truffle.
The glaze didn't work out too well as you can see in the picture, and I'm not sure how they taste. They were very easy to make though other than trying to glaze them... imagine trying to dip a crumbly mass into hot lava.
Verdict: "
Mmm Kahlua" - I don't think I'd make these again the glaze was a hassle and I don't think they're going to be eaten very quickly. They also need to be stored in the fridge.
Raspberry Pinwheels: 51 calories per cookie, 1.3g fat (3 dozen cookies) (
Don't use a serrated knife to cut the dough log)
Note to self: Keep paper towel tubes for icebox cookies. They're really handy for storing the tube of dough in (in waxed paper) as it helps keep its shape and you don't have to worry about find a spot completely level. Also I have to remember next time to use the waxed paper to help roll the dough into a log as trying to roll a 12" square with your hands doesn't work out too well. Verdict: Apparently they're delicious. Crunchy yet still chewy. Very convenient once made, you freeze the dough log for 3 hours (up to 3 months). If you don't roll the dough into a log properly they end up looking a 'little' mangled.
Cinnamon Bun Crunch Cookies (w/ vanilla drizzle): (also Icebox) 52 calories per cookie, 1.5g fat (3 dozen cookies) (add 13.5 calories per cookie if you add drizzle)
Verdict: nom nom. They smell like cinnamon buns and I think they taste like crunchy versions of them. I forgot to put the cinnamon in the topping before I rolled the dough but I just rubbed some on eat cookie before they went into the oven and it seems to have turned out well.
